| 2016 Sauvignon Blanc Semillon

Made from 80% Sauvignon Blanc grapes and 20% Semillon grapes.  The Sauvignon Blanc grows in the Golan Heights and Upper Galilee regions, and the Semillon comes from the hills of Jerusalem.  Merging grapes from two different growing regions allows flexible harvesting, and produces diverse tastes.  This is a sharp, slightly acidic and herbaceous wine, with aromas of grapefruit and pineapple.  The Sauvignon Blanc brings with it a touch of tropics and vegetation, while the Semillon adds complexity and depth. This wine enjoys a clear fresh character, with hints of green apple.

Manufacturing

The grapes underwent whole bunch pressing, a unique method used for minimal contact with the skins.
They were then fermented for about three weeks at 12.5-13.5°C.
Racking was followed by cold and heat stabilization and filtration (0.45 microns) before bottling.
A total of three months in a stainless steel tank.
